New House New Banana Bread

Week 2 in the new house and we have banana's going old, and buttermilk that needs to be used. I opted for the most logical option. Buy a loaf pan and make banana bread. But one loaf pan isn't enough. Luckily I had a mini loaf pan (I can't find my second one) and a mini cupcake pan. But who needs that much banana bread. Puese had the idea to put chocolate chips in it. So I made "Chunky Monkey Loaf" (his term not mine), in the mini pans.

What you'll need:
2.5 cups white sugar
1 cup Butter (or shortening)
3 eggs
1.5 cups of mashed bananas (About 3 bananas)
1 teaspoon vanilla extract
3 cups all-purpose flour
1.25 cups buttermilk
1.5 teaspoons baking soda
1.5 teaspoons baking powder
(If you like nuts you can add 1/2 cup chopped walnuts; we didn't have any on hand, and I didn't want to purchase more ingredients.)
Optional: About a quarter bag of semi-sweet morsels (chocolate chips)

Directions:
1. Preheat oven to 350 degrees F (175 C).
2. Cream together butter(shortening) and sugar.
3. Beat eggs in well, one at a time.
4. Mix in bananas, buttermilk, and vanilla extract.
5. Mix in flour, baking powder, and baking soda.
6. If you're adding nuts, stir them in.
7-1. Pour batter into greased pans. (2 9x5 inch pans) OR
7-2. a. Pour batter into large greased pan (9x5 in)
        b. Mix in Chocolate chips to remaining batter.
        c. Pour batter into greased mini loaf and cupcake pans.
8. a. Bake Large loaf pans 50- 60 minutes.
    b. Mini muffins (cupcake tray) takes about 25 minutes.
    c. Mini loaf pans takes about 35 minutes

Of course all ovens vary, so bake times for each pan will vary. Since this was my first time baking bread in this oven, I thought it wise to stay in the kitchen and keep an eye on the loafs. Last week I baked chocolate chip cookies, and they came out exactly at 9 minutes like my recipe says it should. I have never had cookies come out at 9 minutes before, usually I have to keep watching them for about 2-3 minutes longer.

My problem then, always is, how do I get the bread out of the pans? It never falls out if I flip it over. So anything I bake in a pan doesn't come out very nice. Does anyone know what I'm doing wrong there?
(EDIT: The chocolate is what's making the mini things stick to the pans... the large loaf came right out. But I still do have this problem a lot.)
